Sturgeons belong to the family Acipenseridae and are found in cold to temperate waters, from freshwater to saltwater. They are ancient fish and most grow exceptionally large. They are cartilaginous like Sharks. Their roe is often used for caviar. Most species are vulnerable or endangered.
